The Herb “Rules”

  1. If your recipe calls for fresh herbs but you are using dried, use only ½ the measurement called for in the recipe.
  2. When your receipe tells you to add herbs at a given step, add them. It does not matter if you are using fresh or dried. Please note: dried herbs are much stronger than fresh herbs and can impart a bitter flavor if added at the wrong step.
  3. When you purchase dried herbs or spices, date the containers on your first use with a permanent marker on the bottom of the tin or on the label. The month and year are sufficient. This is because dried herbs and spices maintain their strongest flavor and aroma profiles when used within twelve months of opening.
  4. If you are unsure about an herb or spice’s freshness, use this easy test for freshness: rub a small amount between your fingers. If they don’t smell strong and fragrant, toss them out and order or buy new ones.
